Nordmann partner dsm-firmenich supplies a range of versatile thickening and stabilizing agents that help support food and beverage manufacturing: the GELLANEER® product family.
What is GELLANEER®?
GELLANEER® is a high-performance gelling agent developed by dsm-firmenich. Based on gellan gum, GELLANEER® is a microbially produced polysaccharide that delivers excellent thickening properties, heat and pH stability and has become a popular additive for both beverages and desserts, as well as vegan dairy and meat alternatives.
Varieties of GELLANEER®
dsm-firmenich’s portfolio features a range of gellan gums with different degrees of acylation. Using high acyl gellan gum will result in softer and more elastic gels; low acyl gellan gum produces firmer and more brittle gels.
Characteristics and use of the GELLANEER® family:
- Gelling agent: Food manufacturers utilize GELLANEER® products to create clear, solid, and thermally reversible gels. They are popular for a wide range of applications such as jellies, jams, and desserts.
- Stabilizing beverages: In fruit juices, milk-based drinks and plant-based milk alternatives, GELLANEER® products prevent solids from settling and ensures that fruit pieces and nutrients are evenly distributed. Beverages stay homogeneously mixed and appealing.
- Optimized mouthfeel: GELLANEER® provides for appetizing consistencies in sauces, dressings and soups, improving creaminess and emulsion stability.
- Texturizing agent: Gellan gum is a versatile ingredient that can be used to create diverse textures ranging from soft and elastic to sliceable. This makes GELLANEER® an ideal ingredient for innovative food applications such as the production of vegan cheese and meat alternatives.

Flavors and taste are known to make a difference
Nordmann is now offering natural flavors from its partner First Choice Ingredients. The company, which belongs to the dsm-firmenich group, uses a special manufacturing process called EMC (Enzyme Modified Cheese). By fermenting natural raw materials and using reaction technologies, First Choice Ingredients produces intense, characteristic cheese flavors as well as flavors to enhance buttery, creamy and yoghurt notes for use in the food industry. Nordmann is looking forward to distributing the new products in Austria, Germany and Switzerland.
